Dawn Kappelman - Owner
Dawn's Couture Cakes is under the leadership of Executive Pastry Chef, Dawn Kappelman. Kappelman was Executive Pastry Chef with Oneida Golf and Country Club in Green Bay, Wisconsin and The Wellington Steakhouse before moving to Iowa with her husband.
Dawn’s love of baking can be traced back to spending time with her Grandma in the kitchen and watching her create homespun baked goods. When she was old enough she enrolled in Wilton Cake classes and her interest intensified, as she became a ferocious reader and student of cookbooks and culinary classes. “Family and friends were eager and willing guinea pigs lining up to sample all the things I would make,” recalls Dawn.
Dawn went on to formalize her talents in baking by receiving two Associate degrees in Culinary Arts and Hotel & Restaurant Management from Fox Valley Technical College. From there she continued to hone her craft with various restaurants and country clubs.
For Dawn, owning Dawn's Couture Cakes means having the dream job and her company philosophy is, “You dream it, I can create it!” and loves taking abstract ideas and inspirations that clients have for desserts and turning them into a reality. “I love weddings,” says Dawn. “What more can you ask for than getting to be a part of someone’s day that they will remember forever?”
