Dawn Kappelman -Owner/Pastry Chef About Me: I am a Fox Valley Technical College graduate with Associate Degree's in Culinary Arts, Hotel/Restaurant Managment and a Baking Certificate. I started dabbling with cakes when I began pastry classes at FVTC. I began making cakes for family and close friends. I enjoyed the creativity that I could express with cakes, and my passion for everything scratch began! I started testing, tasting, tweaking, and implementing recipes. I acquired several recipes from my Grandmother, and have accomplished several of my own. My cakes are extraordinary. I do everything from zest and juice lemons to picking and freezing berries seasonally to produce the BEST possible cakes, fillings, buttercreams, and fondant (Yes, my fondant is from scratch as well). Although the use of commercial and pre-made products are easier to work with, I just can't bring myself to use them. My passion for real home-made cakes and creativity for trendy, traditional, and contemporary cakes continues to flourish! I would love to play a part in your next special event or wedding!
